I should most definitely be heading up to bed, but I was up baking these two amazing loafs of bread and had to share my victory with someone. After so. many. failed attempts over the past year of making gluten free bread, I hit the jackpot tonight. I tried out a recipe (which of course I changed most of to fit what I had and wanted it to be like) with dinner and we ate almost an entire loaf, it was so delicious. Jeremy and I both agreed that it tasted better than even my regular french bread I used to make.
This is the first bit of bread I have had in almost 4 weeks. I normally do not enjoy gluten free bread. The store bought stuff tastes dense and similar to cardboard and is not really worth the money. I can now be a happy gluten free person. Shea said, "This is the best bread I have ever had in the whole world. Mom, please make this every day". And is ectastic that he can have peanut butter and jelly again.
Thats all. I just figured why I am up waiting for them to cool off I would brag about this, because I am so excited to have conquered this baking feat!
This looks delicious! I just had my first gluten free bread at church the other day and you are right, the store bought stuff is hard and dense. Communion bread isn't supposed to taste good though, so for me I guess that's ok. :) (We do have regular bread but the server that comes to the back room where mamas and babies sit brings gluten free so he doesn't have to carry both)
