Protein

1/4 cup shredded Sharp Tillamook cheese - 110 calories, 7 grams protein
1/4 cup ground beef - 144 calories, 9.7 grams protein
1/4 cup kidney beans - 50 calories, 4.3 grams protein
1 corn tortilla - 50 calories, 1.3 grams protein

Total:  1 taco - 354 calories, 22.3 grams protein

I'm finally going to do it.  I'm finally going to freeze quick make-ahead meals/snacks.  And why (Angela may ask) am I so concerned about protein, and not about saturated fat content (as I should be for my husband's cholesterol)?  Because I am making these mainly for me!

I am realizing that a lot of my laziness and sleepiness has nothing to do with motivation.  The problem is that when I'm home alone for 12+ hours, I eat like crap.  Part of the crap I eat is anything fast, and that is almost always straight carbs - candy, bread, cereal.  I need something small and fast I can have for dinner instead of snacking all day till Joe gets home at 9:30 and then sharing another snack with him.  Something protein-filled that's not just slices of cheese.

I'm not really counting calories, I've just been watching so much Biggest Loser I couldn't help it.  I have gained weight, but honestly it has nothing to do with my diet, just with a medication I'm on.

So, what inspired this?  Our new freezer.  I know you're dying for pictures of everything but I can't find the camera (story of my life).  As I was transferring frozen stuff, I came across my 1 pound bags of ground beef I froze.  "Hm," I thought.  "Maybe I could actually think ahead for once, and take out some meat to thaw before it's time to cook it."

While I patiently waited for it to thaw, I used the time wisely by watching Biggest Loser and playing computer games.

Then I remembered Joe won't be home till 9:30, so there's no point in cooking a grand supper for just me.

But I did have thawed ground beef which I almost never have, so I said, "I am going to eat PROTEIN!" because I have not really had any today, unless you count the milk in two bowls of cereal, and a mini cheese wheel.

And that (bows) is how I finally got around to following Angela's footsteps.  Actually I haven't yet; I just finished my test run which is also my dinner.  And now I am actually going to do the assembly.

Angela captured Christmas perfectly.  It was really wonderful!  We still have our stockings hanging up.  I'm afraid to take them down because I don't want to loose or damage them.  Our tree is still up but void of ornaments; Joe will help me take it down tomorrow.

Okay, I'm just staring at the screen trying to think of something else to type.  Clearly I'm procrastinating, so bye!

  1. You don't have to worry about ruining the stockings. :) Just put them in a nice little pile and we will have to get together and exchange your tupperware for the stockings. Haha. I have it all washed, stacked and ready to give back to you, thanks for the awesome Christmas dinner leftovers.

    And yay for freezing food and planning ahead! I want to see your new freezer!!
